2025 e'Stellar Syrah

The fruit for this Syrah was sourced from our new A2 block, a site we’re particularly excited about. Planted to two Shiraz clones whose lineage traces back to the historic vineyards of Tahbilk Winery and Best's Wines, these vines are rooted in cracked mudstone with minimal soil, yielding naturally low vigour and concentrated fruit.

The fruit was destemmed and fermented in stainless steel, with daily pump-overs over a three-week period to gently extract colour, flavour and tannin. Following pressing, the wine was matured for 10 months in French oak barrels, 25% of which were new, before being bottled without filtration.

"This is a beautful Yarra Valley syrah/shiraz. It’s built on ripe cherry-plum fruit flavour but then both peppercorn and black pepper characters sweep persuasively through, bringing seductive cedarwood and woodsmoke notes along with them. It feels balanced, silken and complex – with roasted nut notes appearing with air. The extension of the finish is then a noteworthy way to sign off."

"A wine with excellent clarity of blue and black fruits. Plummy mid palate and blueberry freshness. Some caper leaf and Nyon olive, a touch of mulberry sweetness lingers. There is plenty to admire here with a judicious use of oak and holding onto to some fine but structural upright tannins. A wine to drink on its own or with charcoal chicken thighs and chippies. Drink now or within 2-3 years."
