e’Stellar is guided by winemaker Martin Siebert, whose craft is defined by restraint, precision, and a deep respect for place. With over 20 years’ experience across the Yarra Valley and beyond, Martin has built a reputation for producing wines that are elegant, expressive, and quietly brilliant.

His path began with formal study at Charles Sturt University and has been shaped by formative vintages with some of the world’s most respected producers — including Benjamin Leroux in Burgundy, Pegasus Bay in New Zealand, and iconic Yarra Valley estates such as Yarra Yering and Coldstream Hills.

These experiences cemented his belief that truly great wines are born in the vineyard, and that the winemaker’s role is to honour and translate what nature provides.

“I see winemaking as a melding between site, season, and craft. The goal is not to impose, but to reveal — to deliver wines that shine and speak of where they come from.”

At e’Stellar, Martin’s focus is on crafting estate-grown wines from the ancient soils of Dixons Creek — wines that reflect their site with clarity and finesse. His approach is thoughtful and deliberate: working with detail in the vineyard, allowing natural expression in the cellar, and pursuing balance over power.

Behind every great wine is a great vineyard, and at e’Stellar that responsibility lies with vineyard manager Greg McRae. A Griffith local who grew up surrounded by farming, Greg is a farmer through and through — practical, resilient, and deeply connected to the land.

For the past eight years, Greg has cared for the e’Stellar vineyard in Dixons Creek, working in the heat of summer, the frosts of winter, and everything in between — usually with his kelpie Nell close by. His intimate knowledge of the site, built over years of observation and hard work, allows him to navigate the growing season with precision and care.

Greg’s dedication in the vineyard sets the stage for everything that follows. By nurturing the vines and harvesting the grapes at perfect ripeness, he provides the foundation for great wines  — making the winemaker’s job a whole lot easier.
