When we purchased the winery in 2017, it came with a tank of beautiful 2010 sparkling base wine made by the legendary Graeme Miller, winner of the Jimmy Watson Trophy. Graeme had already won multiple gold medals for Sparkling wines crafted from this very base.
Upon popping the cork and pouring the wine, the pale gold hue and fine bead hint at its age and complexity. Aromas of brioche, hazelnut butter and struck match fill the glass, leading to a rich, toasty palate with notes of dried apple, kirsch and oyster-shell minerality. A wine with history, balance and grace — ready for any celebration.

In 2020, we bottled the wine for secondary fermentation using the Méthode Traditionnelle, beginning its slow 5 year transformation on lees. Here it developed secondary, yeast-derived flavours reminiscent of warm baked goods. When disgorged in 2025, the remarkable richness and complexity of this wine were finally revealed — a unique creation from a legend of the vine.

"The base wine was made by pioneer Graeme Miller in 2010, 15 years later the dream is realised, disgorged in 2025, a whooping 5 years on lees. Canary diamond hues in the glass, the wine radiates with yellow plum, cut peaches and Meyer lemon. Butter and honey melting together with roast candlenut, dandelion and bee pollen. There is a base of biscuit crumb that anchors all the ripe fruit, soaring acidity and long lasting brittle and candied orange rind. Flavour flavour flavour and drive.
