2025 e'Stellar Cabernet Sauvignon

Bright ruby with a purple hue, this Cabernet opens with a lifted nose of violets, cassis and a hint of olive brine, with classic cigar box notes from restrained oak influence.

The palate is bright yet complex, sitting firmly in a medium-bodied, claret style, with flavours of dark berries, red liquorice and a subtle mint lift. Fine, integrated tannins provide structure without weight, leading to a long, composed finish. The structure leans on fresh acidity rather than assertive tannin, suggesting graceful ageing over the next decade, while remaining approachable in its youth.

WINEMAKING

The Cabernet Sauvignon grapes were harvested from our old vines in the E3 block, planted to the LC10 clone. The berries were destemmed but not crushed, remaining whole, intact and blueberry-like throughout fermentation.

After three weeks on skins, the wine was pressed and matured in French oak barrels (20% new) for ten months before being bottled unfiltered.
