2025 e'Stellar Cabernet Sauvignon

The Cabernet Sauvignon grapes were harvested from our old vines in the E3 block, planted to the LC10 clone. The berries were destemmed but not crushed, remaining whole, intact and blueberry-like throughout fermentation.

After three weeks on skins, the wine was pressed and matured in French oak barrels (20% new) for ten months before being bottled unfiltered.

"Some cabernets have “cellar” written all over them, and this is one such cabernet. It’s drinking well now but the sinew of it, the inflections of salted herbs, the length and the overall balance all point to a future of high enjoyment. It tastes of plum, redcurrant, olives and cedar, and its all-round pitch is just about perfect. This wine is high in elegance, in the most positive sense of the word, and has genuine structural integrity too."

"Cabernet through and through this opens with cassis and blackberry shrub, some high tones of lavender and Acai berries too. Oak shows more in the mid palate with cedar and tobacco, but berry fruit is dense and weighted,coming out the other side as the hero of this wine. Rosemary and pencil box on the finish, this is more opulent than you may expect and fruit concentration is high and mighty. Drink now with a rib eye, but this has another 8-10 years ahead of it yet."
