2025 e'Stellar Blanc de Blanc

Very pale in the glass, this Blanc de Blancs hints at its freshness from the outset. It pours with a delicate mousse and a fine bead, with aromas of crunchy apple, chalky minerality and fresh dough lifting from the glass.

The palate follows with pear and just-ripe peach leading into a line of racy, lime-driven acidity. There’s a real sense of purity here, giving the wine energy and focus from start to finish.

WINEMAKING

This is the third sparkling in our range, deliberately made in contrast to the others. Where they lean into the richness and complexity of extended lees ageing, this wine is all about brightness and drive. Made from Chardonnay grown on our Dixons Creek floodplains.
