2024 e'Stellar Cabernet Sauvignon

“The smells of a forest after summer rain.”

Bright ruby-purple in the glass, this Cabernet opens with aromas of Black Forest cake and sarsaparilla, lifted by a hint of green olive — a nod to a dirty martini. An evocative note of petrichor (the scent of summer rain) emerges late.

The palate is lively and precise, layered with sweet forest berries, tart cherries, and earthy beetroot, finishing long and mineral. Its structure leans on fresh acidity rather than assertive tannin, suggesting graceful ageing over the next decade or more.

WINEMAKING

The Cabernet Sauvignon grapes were hand-picked from our old vines in E3 Block, planted to the LC10 clone, before destemming. Half of the berries were lightly crushed, while the remainder were left whole — intact, round and blueberry-like — throughout fermentation.

After three weeks on skins, the wine was pressed and matured in French oak barrels (20% new) for 10 months.
